Creamed Spinach
1 package frozen spinach
a wee bit-o-olive oil
garlic
salt & pepper
a healthy scoop of parmesan
1/2 c heavy cream
Heat oil in a pan. Saute garlic. Add spinach and cook for 2 minutes. Add parmesan and heavy cream, mix well. Add salt and pepper to taste. Cook until thickened and scrummy.
Yummy Roast
2 tablespoons of olive oil
salt and pepper
1 hunk of gorgeous red meat (helpful ain't I?)
2 onions diced
3 lrg carrots diced
2 stalks of celery diced
garlic (as much as you like)
1 cup tomato sauce
2 1/2 cups red wine
2 cups water
a few sprigs of rosemary
Heat oil in a pan. Salt and pepper the roast. Brown the meat on all sides.
Place roast in roasting pan. Cook the garlic, onions, celery and carrots until almost tender. Add tomato sauce, bring to simmer. Add red wine and let simmer until reduced by almost half. Pour the vegetable/red wine concoction over the beef, add the water and rosemary. Cover and let cook for approx. 2 hours. EAT!
1 1/2 c. flour
3 1/2 tsp. baking powder
3/4 tsp. salt
1 tblsp. sugar
1 1/4 c. milk
1 egg
3 tblsp. melted butter
Mix up all the dry ingredients. Add the egg, milk and melted butter and blend well. Scoop onto a hot griddle and cook until golden and brown. **Be warned: This batter is super thick**
The BEST Pie Crust Recipe Ever
2 c. flour
1 tsp. salt
1/2 c. cold butter, cubed
1/4 c. shortening, cubed
1/2 c. ice water
2 tblsp. of lemon juice OR vinegar
Mix flour and salt, cut in butter and shortening. Add the vinegar/juice to the ice water. Add the liquid little by little to the dry mix until it starts to resemble pastry. (Don't add too much!) Put in fridge to rest for 30 min. before rolling.
Peanut Butter Oatmeal Cookies
My favourite new cookie recipe.
1 1/2 c. flour
1/2 c. butter
1/2 c. peanut butter
2 eggs
3 c. oatmeal
1/2 tsp baking soda
3/4 c. sugar
1 c. brown sugar
1 tsp vanilla
Mix it all up, drop spoonfuls on a baking sheet and bake at 350 for 10 minutes
